Hi! I’m Janis. I’ve loved to cook for as long as I can remember. For me, cooking is a lot of things…it’s an outlet for me to express creativity, it’s a stress reliever, it’s a way to keep myself busy and on my toes, but most of all it’s a way for me to show people that I care. I cook for people in times of joy and happiness, in times of uncertainty, in times of sadness, and in times of celebration. In my opinion, there’s no occasion where a plate of freshly homemade chocolate chip cookies is inappropriate.
Why JanisCakes? My husband loves making up nicknames for me. Shortly after a particularly enthusiastic cake-baking rampage I went on a few years back, he started calling me Janis Cakes. The nickname stuck…and here we are today, still baking and cooking up a storm!
I happen to be extremely allergic to both peanuts and tree nuts, so creating my own recipes allows me to create delicious treats without worrying about cross-contamination with nuts, potentially sending me to the ER. I love trying to reinvent recipes that traditionally contain nuts (like carrot cake, pesto, and granola), with nut-free versions so I can enjoy all those fabulous foods as well! You won’t find any recipes on my blog that use nuts, nut oils, or nut butters.
Some of my dishes are vegan or vegetarian, but (other than nuts) I really eat anything! I generally try to eat pretty healthy, but there are some recipes that quite frankly are worth every delicious, decadent calorie. If you see recipes on JanisCakes.com that use heavy cream or multiple sticks of butter–just trust it. I can guarantee that I’ve tried lighter versions of the same recipe and they just don’t compare (perfect example: Holiday Fudge). Fully embrace the indulgence, all guilt aside. After all, you can always balance it out by making Tempeh Vegetable Burritos or Slimmed Down Cobb Salad. You’ll find it all here. Enjoy!
